MMMonday

Do you change up your dinner menus with the seasons?  At our house, we lean towards soups and comfort food in the fall and winter and tend to do more sandwiches and grilled food in the spring and summer.

Recently, we had one of our favorite Chicken Salad Recipes.  I like this recipe because you can make it ahead if you are going to be busy and just pull it out at dinnertime.

P1200629Chicken Salad Sandwiches

2 cups chopped chicken

1/2 cup mayonnaise

2 teaspoons yellow mustard

1/2 cup thinly sliced celery

1 Tablespoon finely chopped onion

1/4 cup sliced pitted olives

1 20 oz. can pineapple chunks or tidbits

1 11 oz. can mandarin oranges

Salt and pepper to taste

Additional options:

green peppers, mushrooms, grapes, nuts, etc.

Drain liquid from canned ingredients and combine with all other ingredients.  We sometimes add or subtract ingredients based on mood and availability.  Refrigerate till ready to eat.  We usually serve this salad on a croissant, but it’s also good on toast, or with crackers.

My Easter Wreath

You all know I love a good wreath, and my door had been vacant since Christmas, so I thought I would put together a Springy Easter wreath.  I was browsing through the dollar store a while back and found these fun sparkly eggs.

It was an easy project and went together quickly, but I’m not really loving it.  It’s cute and festive, but for some reason I am lukewarm about how it turned out.

Around Here

P1200710 I’m loving asparagus lately.  Drizzle with olive oil, sprinkle garlic salt and a little bit of pepper.  Roast for 30 minutes.  It’s so good.

We had our Young Women’s New Beginnings a few weeks ago.  It was really fun, and turned out great! P1200644 P1200759 This time of year, I love to have fresh flowers in my house.  They make snowy March days like today bearable.

Visiting Teaching March 2014 {The Divine Mission of Jesus Christ: Light of the World}

This month’s message is a good reminder that we can follow The Savior’s example and be a light to others.  President Henry B. Eyring said, “Each time we choose to try to live more like the Savior, you will have your testimony strengthened. You will come in time to know for yourself that He is the Light of the World….You will reflect to others the light of Christ in your life.”

So awesome.

So for the message this month, I grabbed an old atlas that I had lying around, and ripped out the pages.  You can find old atlas’ at thrift stores pretty regularly.  Sorry in advance for the blurry pics.

P1200646P1200647 I folded one long edge up 2-3 inches to make a pocket, and then folded the right side in about 2 inches and then unfolded it and stapled to make a pocket for the glow sticks.  Then I folded it in again.

P1200648P1200649P1200650 P1200658 Next, I folded the left side over almost to the edge of the other fold, but stopped about a half an inch before the end.

I then unfolded, trimmed the edge so it looked like an envelope.

P1200652 After that, I trimmed the pocket off of the far left area and tucked the end underneath the center pocket.  Then I stapled it so that the pocket for the message was defined.

P1200653P1200656P1200657P1200659Next, I printed the message {there are 2 per page}, and also the band to wrap around the outside.P1200665

To assemble, I trimmed the message and added it and the glow sticks to the small pocket,

P1200668 P1200669then folded everything up and wrapped the band around the map envelope, securing it with double-stick tape.  To finish, I added a little bit of twine around the band.
